I've been wanting to really go paperless for a while but I and my students and my school just don't have the technology for it.  One of my summer projects is to apply for a grant to take my class paperless next year with an interactive whiteboard and ipads.  My first application is the Pepsi refresh project at the $5k level (I teach part-time, advanced electives, so I only have about 20 students so that's enough).  They ask you to choose environment or education.  The proposal is both.  Which one would you pick?  Which do you think is more likely to win favorable votes?

I'm not sure which you should pick, but whichever you do mention in your proposal the difficulty of making the choice. Also, http://teachpaperless.blogspot.com/ is an outstanding resource for going paperless.
Thanks! @teachpaperless is a great resource, been following him for a long time! My students have been turning things in on Google docs occasionally, but I teach Spanish and don't believe homework is terribly beneficial in that subject, so we do our most effective stuff in class, and we have a hopeless tech ban at school. Several of my students have ipods and smartphones but I have been told "don't hold your breath" every time I've brought up potentially lifting the ban in my class, so a lot of the things @teachpaperless does I can't do. :o( If we had school-proprietary ipads though...!

How nice you've got the chance of going paperless. That would be ideal! I'd like to ask you why is it you have to choose between environment or education. I'd choose both if it's possible. I wouldn't be able to pick one.
